Carrot Cake Bites

These bite-sized desserts are gluten-free, delicious and easy to eat.
Ingredients
- 3 carrots
- 1 cup sunflower seeds
- ½ cup dates
- 1 Tablespoon coconut oil
- 1 teaspoon cinnamon
- ½ teaspoon crystalized ginger, chopped
- Shredded coconut for rolling (unsweetened or sweetened)
Directions

Place carrots in a sturdy food processor and shred finely.

Add remaining ingredients to the food processor, excluding coconut and pulse until the mixture comes together into a large ball. (This may take some time.)

Use a teaspoon to form balls (the mixture will be sticky but the texture improves once you roll in coconut).

Roll the balls in shredded coconut and store in an airtight container.

Refrigerate for at least a few hours before serving. Keep refrigerated and eat within 5-7 days.
