Kale and Strawberry Salad Course: Salads

The chive dressing in this simple salad creates a memorable, go-to dish.

SERVES: 6

Ingredients

  • 1 cup loosely packed basil leaves
  • ½ cup roughly chopped chives
  • ½ cup extra virgin olive oil
  • Juice and zest of one lemon
  • Fresh ground black pepper to taste
  • Salt to taste
  • 2 cups lacinato kale, stems removed, leaves rolled and sliced thinly on the diagonal
  • 2 cups sliced strawberries

Directions

  1. Make the chive dressing: In a food processor, pulse the basil, chives, olive oil, lemon juice, and lemon zest until emulsified. Season with salt and pepper to taste.

  2. Assemble the salad: In a large bowl, mix the kale with the dressing until well coated. Gently fold in the strawberries. Taste and adjust seasoning as necessary. Serve chilled or at room temperature.
