Homemade popsicles are free from all the extra stuff often found in store-bought popsicles and you can be a bit creative and use truly ripe, local produce.
After experimenting with a variety of combinations, we're ready to share our take on homemade popsicles with fresh, local produce.
Ingredients
- 1 medium melon, peeled, seeded and cut into chunks (3 cups)
- 1 small cucumber, cut into chunks (1 cup)
- 1 handful fresh mint (10 leaves), finely chopped
- 2 Tablespoons honey
- 2 Tablespoons water
Directions

Chop melon into 1-inch pieces and roughly chop mint and cucumber.

In a small pan, warm 2 Tablespoons honey and 2 Tablespoons water until the honey is soft and liquefied with the water.

In a blender or food processor, add the chopped melon, chopped cucumber, fresh mint, honey and water. Blend until smooth.

Pour into popsicle molds and freeze overnight. Makes approximately 6 standard popsicles, 3-4 ounces each.
Recipe Notes
Adding a little bit of sweetener is completely optional, but it does help bring out the natural flavors of the fruits.
