 
				
					
																
									 
				
			
			This nutty and spicy recipe makes a quick and easy lunch or dinner!
SERVES: 6
Ingredients
- 9 oz package udon noodles
- 2 tablespoon olive oil
- 1 lb chicken (optional)
- 2 tablespoon sesame oil
- 1 cup carrot
- 1 cup red bell pepper
- chili flakes (to taste)
- 2 cloves garlic, fresh
- 2 teaspoon ginger, fresh minced
- 1 cup shiitake mushrooms
- 4 onions, chopped
- ⅓ cup peanut sauce
- 4 tablespoon cilantro
- peanuts, chopped (to garnish)
- lime (to garnish)
Directions
- 
	Cook udon noodles according to package directions. Rinse and set aside. 
- 
	If adding chicken, cut your chicken into thin strips. 
- 
	Add olive oil to pan and cook chicken through. Set aside. 
- 
	While chicken is cooking, chop carrots and red bell pepper into thin strips. 
- 
	Heat sesame oil in the same pan and cook carrots and red pepper. 
- 
	While veggies are cooking, mince your garlic and ginger and chop the mushrooms and green onion. 
- 
	Add chili flake, garlic, ginger, mushrooms and green onion to pan and cook an additional 2-3 minutes. 
- 
	Add cooked noodles and chicken back to the pan with your vegetables and reduce heat to low. 
- 
	Pour peanut sauce into pan and gently stir it in, covering all the ingredients and warming the sauce. 
- 
	Chop cilantro and peanuts. 
- 
	Sprinkle the cilantro and peanuts to the top of the Thai noodles. 
- 
	Serve with a wedge of lime and squeeze before eating.
