Steel cut oats are whole grain groats, the inner portion of the oat kernel which have been cut into two or three pieces rather than rolled like rolled oats. They are rich in B-vitamins, calcium, protein and fiber while low in sodium and unsaturated fat. They are a golden hue and look like chopped nuts or tiny grains of rice. Steel cut oats offer a nuttier alternative to the rolled oats most people know. You can use steel cut oats as a cereal, such as in oatmeal, or add them to baked goods for a more nutritious product. They are a tasty addition to a grain salad in place of bulgur, rice, couscous or pasta.

Ingredients

  • 1 cup steel cut oats
  • ½ cup sunflower seeds
  • ½ cup toasted wheat germ
  • ½ cup pecans
  • ½ cup raisins
  • ½ cup dried cranberries
  • ½ cup instant nonfat dry milk
  • ¼ cup whole-wheat pastry flour
  • 1 teaspoon cinnamon
  • ⅓ cup maple syrup
  • 2 large eggs
  • 1 large ripe banana, peeled and cut into chunks
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 350°F. Coat a 9 x 13-inch baking pan with nonstick spray or oil.

  2. Combine the oats, sunflower seeds, wheat germ, pecans, raisins, cranberries, dry milk, flour, and cinnamon in a food processor. Pulse until the mixture is finely chopped. Add the syrup, eggs, banana, and vanilla and pulse until well combined.

  3. Transfer the mixture to the pan and press down to level the surface. Bake until the mixture is golden brown and firm to the touch, about 25 minutes.

  4. Cool in the pan and cut into 32 bars.

  5. Store un-refrigerated, in an airtight container for up to 5 days.
