Corned Beef and Cabbage (Slow Cooker Version)

Hearty and comforting, this popular St. Patrick's Day recipe is best served with a loaf of Irish soda bread and a green bean salad.
SERVES: 4
Ingredients
- Red Potatoes – 2 lbs
- Carrots – 4
- White or Yellow Onion – 1, medium sized
- Corned beef brisket, seasoned– 2-3 lbs
- Apple juice or water – enough to cover
- Green Cabbage – 1, cut in wedges
Directions
Toss your washed, cut veggies into the bottom of a slow cooker. Top with seasoned corned beef brisket. Add apple juice or water to cover. Cover and cook on low 8-10 hours. Remove the beef, set aside, covered to keep warm. Add cabbage wedges to slow cooker, turn up to high and let cook an additional 30 to 35 minutes. Serve with horseradish or mustard alongside Irish Soda Bread.
